Is garlic low FODMAP?
No. Garlic is high FODMAP because it is rich in fructans, even in small amounts. Garlic-infused oil is a low FODMAP way to keep the flavor.
Main FODMAP group: Fructans
Garlic is one of the most concentrated sources of fructans in an everyday diet, and it hides in sauces, stocks, spice blends, marinades and ready meals. Fresh garlic, garlic powder and garlic salt all count.
Why garlic causes symptoms
Fructans are chains of fructose that humans cannot fully digest. In people with IBS, fermentation of fructans in the large intestine can trigger bloating, gas and pain.
Cooking without garlic
Fructans are water-soluble but not fat-soluble. That is why garlic-infused oil is low FODMAP: cook garlic in oil, then remove every piece before eating. Commercial infused oils work too. Garlic cooked into a soup, stew or sauce stays high FODMAP, because the fructans leach into the liquid.
Read labels
Look for garlic, garlic powder, “spices” or “natural flavorings” on packaged foods. Logging the meals where garlic shows up makes it much easier to see whether it matters for you.
Low FODMAP swaps
- Garlic-infused oil (fructans do not dissolve into oil, so the flavor carries over without them)
- Chives
- A small pinch of asafoetida (hing) in cooked dishes
